Abstract

The primary focus in this study is to investigate the ethnic origin of a cultural heritage of the product Hellim/Hallumi with specific reference to language, culture and social values. By doing this, it is intended to underline the norms of unifying and universality of cultural heritages and therefore, in the process of willingness to possess the cultural value the study pinpoints the realities about it and tries to raise an awareness. When historical studies are taken as benchmarks for the study of Hallumi, it can be seen that the first man was actually in search of preserving milk that they had got from the animals for the purpose of longer time use in the form of processed means. This thought of first man had been mentioned in the writings of Aristotle and Herodotus. The preservation of milk as in the form of Hallumi is almost certain when archeological studies are referred to. Within the framework of historical and archeological studies, the origin of Hallumi goes to Egyptian and Roman civilizations. In the study, language, culture, history and demographical relations will be taken as the basis as well as the Ottoman Seriye documents.
